Settings / Menu: just uncheck the checkboxes of apps you don't need (note that you can't uncheck Today):

Sure there is! Settings / Buttons, click the button you want to redefine so that it is highlighted and choose <Rotate Screen> from the bottom drop-down list:

1. Word doesn't take into account the current state of Settings/Input/Options/Capitalize first letter of sentence; Notes, on the other hand, does.
2. not by default. There're, however, several third-party apps that, with some restrictions, do this. Please see this thread.
